A one-pan taco dinner of seasoned beef, black beans, corn, and melty cheddar scooped up with warm corn tortillas.

Ingredients

  • 10.5 oz 90% lean ground beef
  • 0.75 cup canned black beans, drained
  • 0.5 cup corn kernels
  • 4 corn tortillas
  • 1.5 oz cheddar cheese, grated
  • 4 tbsp salsa
  • 0.5 cup onion, diced
  • 1 tbsp taco seasoning

Instructions

  1. Brown the ground beef with the diced onion in a skillet over medium-high for 5 to 6 minutes, breaking it up, until no pink remains and the onion softens. Drain off excess fat.
  2. Stir in the taco seasoning with a splash of water and cook 1 minute until fragrant, then add the black beans and corn and heat through 2 minutes.
  3. Scatter the grated cheddar over the top, cover, and cook 1 to 2 minutes until melted.
  4. Warm the corn tortillas in a dry pan and serve alongside for scooping, topping the skillet with the salsa.
