Golden medallions of pork tenderloin with garlicky green beans and crispy potatoes — an elegant, lean dinner that comes together fast.

Ingredients

  • 12.5 oz pork tenderloin, sliced into medallions
  • 2.5 cups green beans, trimmed
  • 1.5 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 large potato, diced
  • 1 tbsp unsalted butter
  • 0.5 tsp fine salt
  • 0.25 tsp black pepper

Instructions

  1. Toss the diced potato with half the olive oil, salt, and black pepper and roast at 425 F for 20 minutes, or pan-fry over medium 12 minutes, until golden and tender.
  2. Slice the tenderloin into 1-inch medallions and press flat. Sear in the remaining olive oil over medium-high for 3 minutes per side until browned and just cooked through, then rest on a plate.
  3. Add the green beans and a splash of water to the pan, cover, and steam 4 minutes until crisp-tender and bright.
  4. Add the butter and minced garlic to the beans and toss 1 minute until fragrant, then serve with the pork and potatoes.
