Ingredients

  • 14 oz boneless skinless chicken thighs
  • 2 tbsp honey
  • 1.5 tbsp soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1.25 cups cooked brown rice
  • 0.25 tsp fine salt
  • 0.25 tsp black pepper

Instructions

  1. Pat the chicken thighs dry and season with the salt and black pepper. Sear in the olive oil over medium-high for 5 minutes per side until deeply golden and cooked through.
  2. Meanwhile, stir together the honey, soy sauce, and minced garlic in a small bowl.
  3. Reduce the heat to medium, pour the honey-garlic mixture into the pan, and simmer 2 to 3 minutes, spooning it over the thighs, until the sauce reduces to a sticky glaze that coats the chicken.
  4. Slice the thighs and serve over the warm brown rice, drizzling any remaining glaze on top.
