Ingredients

  • 2 pieces chicken breasts
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
  • salt (to taste)
  • black pepper (to taste)
  • 2 tablespoons fresh herbs (parsley, thyme)

Instructions

  1. In a bowl, mix lemon juice, olive oil, minced garlic, salt, pepper, and fresh herbs to create a marinade.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Let them rest for at least 15 minutes.
  3. While the chicken is resting, prep the mixed vegetables by chopping them into bite-sized pieces.
  4. Heat a grill pan over medium-high heat.
  5. Sear the marinated chicken breasts on the grill pan for about 6-7 minutes on each side or until fully cooked.
  6. In a separate skillet, sauté the mixed vegetables for about 5-7 minutes until tender.
  7. Serve the grilled chicken alongside the sautéed vegetables.
