A flavorful grilled chicken dish marinated with lemon and herbs, served with a mix of seasonal vegetables.
Ingredients
- 2 pieces chicken breasts
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
- salt (to taste)
- black pepper (to taste)
- 2 tablespoons fresh herbs (parsley, thyme)
Instructions
- In a bowl, mix lemon juice, olive oil, minced garlic, salt, pepper, and fresh herbs to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Let them rest for at least 15 minutes.
- While the chicken is resting, prep the mixed vegetables by chopping them into bite-sized pieces.
- Heat a grill pan over medium-high heat.
- Sear the marinated chicken breasts on the grill pan for about 6-7 minutes on each side or until fully cooked.
- In a separate skillet, sauté the mixed vegetables for about 5-7 minutes until tender.
- Serve the grilled chicken alongside the sautéed vegetables.
